The Black Walnut Festival™ Candy and Cake Bake-off is being sponsored by Broughton Foods. In the past the contest has featured cupcakes, candy or cookies along with the black walnut cakes.

Black Walnut Candy

1 cup sugar
1 cup water
1 teaspoon salt
1 cup shelled black walnuts
½ teaspoon vanilla extract
Cook sugar and water until it barely threads (235 degrees). Let stand until bubbles disappear Add 1 teaspoon salt and beat until cloudy. Add walnuts and vanilla extract. Beat until fairly stiff. Pour onto cooling board to set. Break into pieces.

Walnut Coca Fudge

2/3 cup coca
3 cups sugar
1/8 teaspoonful salt
1-1/2 cups milk
¼ cups butter
1 teaspoonful vanilla
½ cup peanut butter
½ cup black walnuts
Mix dry ingredients in heavy 4 quart saucepan, stir in milk. Heat for 2 minutes then add butter and vanilla. Bring to “bubbly” boil on medium heat, stirring constantly. Boil to softball stage. Remove from heat, stir in peanut butter and then black walnuts. Cool pain in cold water, stirring constantly until fudge thickens and loses some of its gloss. Quickly spread in lightly buttered 8-9 inch square pan. Cool and cut. Makes 20 squares.

Microwave Nut Brittle

1 cup sugar
½ cup light corn syrup
1 to 2 cups nuts, coarsely chopped (black walnuts)
1 tsp. butter
1 tsp. vanilla
1 tsp. soda
Use 1-1/2 qt. casserole.
Stir together sugar and syrup, cook 4 to 5 minutes. Stir in nuts, cook 3 to 4 minutes. Add butter and vanilla, stir well, cook 2 to 3 minutes. Add soda, gently stir until foamy. Quickly pour onto greased cookie sheet. Do not spread. Break into pieces when cool. Store in airtight container.
